    Key responsibilities: - Leading experimental research concerning cocoa(powder), chocolate and derivatives to be used in food products - Developing new chocolate products via fundamental long term research - Coordinating all research activities focused on the quality and flavor of fermented cocoa beans and the chocolate produced thereof, being it: • Locally, carrying out field trials on different cocoa plantations in different countries • By molecular and genetic techniques in laboratory environment, conducted in Belgium - Active participation in sourcing activities within the cocoa world, visiting cocoa farms Reason for stop: contract ended in agreement (although I learned a lot and liked several aspects of the job, the core of the function did not match with my expectations )

  • Thesis Student
    September 2011 --- May 2012
    Research project between Barry Callebaut (ir. Gino Vrancken, ir. Herwig Bernaert) and University of Leuven (prof. Kevin Verstrepen), concerning the flavor (improvement) of fermented cacao beans, from which all chocolate products are made of. For this research, I worked 3 months on a cacao plantation in Malaysia (Kuala Lipis), performing field trials and laboratory experiments. Title of thesis: 'Development of optimal starter cultures for cocoa fermentations in view of the efficient production of chocolate with an improved flavor'. As a starting point for a PhD research with the same subject, eventually a scientific paper was released in which some of my results were used (see further, publications).
